Rob’s Apple Tea Cake

Apple or Quince Tea Cake

Alison Bain
to me
Hi Rob, Did you catch your train?

  • 5 oz SR Flour
  • 3 oz sugar
  • 1 egg
  • 1/2 cup milk
  • 2 oz butter (melted)
  • Peeled and finely sliced apple or quince
  • 1 tsp heaped cinnamon
  • 1 tsp mixed spice
  1. Heat oven to 180C
  2. Mix together in a cup the cinnamon and mixed spice with 1 heaped desert spoon of the sugar.
  3. Melt butter and allow to cool.
  4. Put sifted flour and sugar in a bowl.
  5. Add beaten egg, milk and butter and mix into flour. Beat well for about 2 minutes.
  6. Pour mix into an 8 inch round baking tin, with greased sides and lined with baking paper.
  7. Arrange sliced quince/apple standing up on top and sprinkle with cinnamon.
  8. Bake for 40-45 minutes, and check earlier.

Make sure it’s cooked in the middle, test with a skewer. Don’t let it rise too quickly cos that’s when it browns on top and isn’t cooked well in the middle.

Fay taking choir for 3 wks

Hi Everyone,

Just a reminder that the wonderful Fay White will be taking Mainesong for the next three Wednesdays. She is really looking forward to being with you and you will be in for a lovely treat ..and rest from ‘Erik”! and even Portuguese things! Fay is a highly experienced singer/songwriter and choir leader, for those of you who haven’t yet been lucky enough to meet her yet.

I know also, that you will look after her.

I will be busy teaching those dedicated Steiner violin students at the Little Yarra Steiner School and doing some accompanying for VCE at the school as well, along with catching up with my sister, who also teaches there.

Another reminder that we are all gathering at the Maldon Hotel on July 18th for dinner and a sing…family and friends welcome. We just need to let Jan know for bookings.

See you on the 27th June. Have fun!

Pastime with good company

King Henry VIII might have been mad, bad and dangerous to know, but when he wasn’t killing his wives, or marrying them, or flensing his enemies, he enjoyed a good party and a song. Take this one, “Pastime with good company” which he composed. Seriously, you wouldn’t want to be seen not singing it …
